Hot Artichoke Dip meets Creamy Spinach Dip in this marriage of taste bud heaven.  Mix in a little fresh garlic and a couple of cheeses for a Dip. To. Die for.  Seriously.  This is a copycat recipe for the Baked Artichoke & Spinach Dip that The Historic Wolf Creek Inn serves only on special occasions.  Now you can whip this up at home lickety-split and enjoy all it’s goodness from the comfort of your couch.  Plus no one sees you licking your bowl clean either!

Chances are you have everything in your pantry to make this using only measuring spoons and a knife.  No blender or food processor makes clean-up a breeze too.  Somehow less dishes makes anything taste better.  All ingredients get mixed together right into the same bowl that you bake it in.

Hot Artichoke & Spinach Dip
Prep Time:  10 min
Cook Time:  20 min
Servings:  8-10
1 ~ 14 ounce can water packed artichoke hearts, drained & chopped
1 ~ 10 ounce pack frozen chopped spinach, thawed & drained
2/3 cup mayonnaise
1/3 cup light sour cream
4 ounce Neufchatel Cheese, softened (or regular cream cheese)
2 cups Parmesan Cheese, grated
2 garlic cloves, minced
1 small onion, finely chopped
Preheat oven to 350 degrees.
Prepare and mix artichokes, spinach, mayonnaise, sour cream, cheeses, garlic and onion into a 2 qt. casserole dish.  Or mix in a bowl and spoon into individual ramekins.
Bake 20 minutes or until bubbly and heated through.
Serve with a sliced baguette, crackers, or just a spoon.
Cooks Note:
For a spicier version add 1/4 tsp chopped roasted red pepper flakes to the mixture before cooking.

See what I mean?  Simple.  More like simply delicious.  Pictured above is ‘technically’ a 2-person size but I seriously devoured the entire bowl after I was done taking pictures.

Would it be totally wrong to completely forgo Corn Beef & Cabbage and make a quadruple batch of this for St. Patrick’s Day?  It IS green!

    We love this dip, it’s similar to what some restaurants offer as an appetizer up here. This recipe looks so easy, and I would definitely add the pepper flakes!
