At our recent Annual Family Easter Party my mom brought her world famous Homemade Macaroni Salad. Seriously. It’s world famous. And I love it. And I had a huge plate (or two) filled with this stuff. It’s all I wanted to eat. Well that and my little ladies 3rd birthday Donut Cake I made. Anywho I begged my mom to share her recipe, and she did! I thought it would be perfect to share it the week of Mother’s Day =)
Honestly all summer long I crave this stuff. I prefer it loaded to the gills with olives and I have a brother who HATES olives. So growing up my sweet mother would either decorate the top with olives and I’d get to scrape them all off onto my plate, or she’d make me my own personal bowl of macaroni & olive salad. Is she a SuperMom or what?!!
Notice this is not a vinegar-y macaroni salad. That is why it is so stinkin good! The sweet pickle relish adds just the right amount of tang. Oh man I can’t wait for BBQ season. I’ll be eating Mom’s Homemade Macaroni Salad all. summer. long.
Are you a olive or no-olive kinda macaroni salad eater? Truthfully, I add about 2 more cans of olives in! =)
